Apple Cobbler Recipe

This fresh apple cobbler recipe is so delicious, yet easy and fun to prepare.
Of course this version is vegan and raw, so it is served cold. You can serve it with some Vegan Ice Cream if you like. OR if you really have something against cold desserts, you could make it as per the recipe below and then warm it gently for an hour or so in a dehydrator (if you have one), or oven on very low heat.

Easy Apple Cobbler
Ingredients: Filling
5x Medium Apples
1/2 cup raisins soaked for 2 hours
1x tsp ground cinnamon
1/2 Lemon (Juiced)
4x Medjool Dates
1/2 tsp vanilla essence
Ingredients: Topping
1.5 cups walnuts
3/4 cup pitted medjool dates
Method: Filling
Peel and chop one of the apples. Put it in a food processor together with the drained raisins, cinnamon, lemon juice, dates and vanilla.

Process until smooth and creamy.
Peel the remaining 4 apples and slice very thinly. Place in a bowl and then toss with the pureed sauce.
Then move this filling mixture into a glass pie tray.

Method: Topping
Place the walnuts and dates into the food processor and pulse until finely ground and evenly mixed.

Crumble over the top of the pie as evenly as possible.
And there you have it! Easy and delicious!
