This caramel pie recipe came about by accident - truthfully we were trying to make a PUMPKIN pie but were told, due to the fact that getting the 'right' kind of sweet pumpkin could be tricky, to use a mix of carrot juice, nuts and spices to get a pumpkin 'flavor'. Well what happened instead was that we got the most delicious CARAMEL pie!
In South Africa, before I was vegan, I used to make a peppermint caramel tart, that was simply: a base of crushed biscuits, followed by a thick layer of caramel (sold in tins there, that is essentially cooked and solidified condensed milk), followed by a layer of cream and then topped off with a grated peppermint crisp chocolate. I was a big fan of this tart back in the day, and considering that this caramel pie recipe does not use ANY similar ingredients, it was quite a shock to have this 'pumpkin pie' come out tasting very much like that! And happily vegan too.
So I had to call this a caramel pie or you could even call it a caramel cheesecake or a caramel CUSTARD pie, all those names fit this pie very well!
Caramel Custard Pie Crust: Ingredients
1/2 cup cashews
1/2 cup almonds
1 cup dates
Caramel Custard Pie Crust: Method:
Grind up nuts in a food processsor, slowly add the dates. Press into a pie pan and into the freezer to set.
Caramel Pie Recipe: Ingredients: Filling
1.5 cups carrot juice
2 cups cashews (pre-soaked for at least an hour)
8 pitted dates
1 tsp cinnamon
1/4 tsp nutmeg
Dash of cloves
Caramel Pie Recipe: Method:
Put all ingredients into a Vitamix or other high speed blender and blend until very smooth. Pour over the crust. Allow to set in the freezer for 1 - 2 hours and then serve with sliced banana and a sprinkle of nutmeg over the top.
Serves many!
We had this pie for our Christmas dinner. This is definitely 'celebration' food and should not be eaten regularly as it is very high in fat, which I imagine is kinda obvious but just in case anyone thought that they could eat the whole pie just cos it's raw, I'm sorry to have to burst your bubble! As an occasional treat though, it is absolutley YUM!

We DID use a Vitamix to make the caramel custard pie above. And it was AWESOME! I seriously, truly, ridiculously recommend you get yourself a Vitamix, and then if you must - get a juicer too! The combination is just wicked!
