Chocolate Cheesecake Recipe

This chocolate cheesecake recipe is the ultimate in homemade chocolate pie recipes.

It's extremely simple and almost impossible to mess up, yet it is the most deliciously gourmet chocolate heaven that you can imagine!

The addition of blueberries to this recipe blends perfectly with the rich chocolate cheesecake flavor and the combined tastes are exquisite.

As with all nut heavy recipes (and this one takes the cake, literally), once you make it, share it far and wide! Don't eat more than one slice of it yourself unless you want to see some extra curves on your hips. Just because it's raw doesn't mean it doesn't count. Fat is fat and this is very high in fat, but OH so tasty!

Ingredients: Crust

2x cups walnuts
1x cup medjool dates
2x tablespoons cacao

Method:

Place the ingredients in a food processor and process on the S blade until a biscuit like consistency is formed.

Pat down into a pie dish and put into the freezer to set while you prepare the next layer.

Chocolate Cheesecake Recipe - Base

Ingredients: Cheese

3 cups cashews (soaked for 2 hours)
3 peeled lemons
1 cup date honey
1 tsp vanilla essence
4 tbsp cacao

Method:

Place ingredients into blender and blend. Spoon this mixture on top of the walnut and date crust.

Place into the freezer to set once again.

Ingredients: Topping

2 cups blueberries
1 cup cashews
5 medjool dates
2 tbsp cacao

Method:

Place the topping ingredients into the blender and blend until thick.

Spoon this over the top of the pie and return to freezer to set.

This pie serves many!

Blenders!

I do recommend you get a decent blender. There are a few good ones around, but the best in my opinion is a Vitamix. Perfect for making pates, raw soups and salad dressings and amazing raw food recipes. A quality blender like this will also make short work of my fruit smoothie recipes, fruit dessert recipes and other easy healthy recipes!

A Vitamix saves you a lot of time in the kitchen since it is super quick and efficient!
