Cold Soup Recipes: Green Soup

Cold Soup Recipes: This green soup is the ultimate in healthy raw soups, and is wonderfully fresh and delicious.
These raw soups are now my favorite way of consuming raw leafy greens: they are wonderfully savory and perfect for dinner time.
Ingredients:
- 5 Tomatoes
- 2 Small Cucumbers (peeled)
- 10 small dates (pitted)
- 10 sundried tomatoes (soaked for a couple of minutes)
- 1 pound baby spinach
Method:
Quarter the tomatoes, peel and quarter the cucumbers, and starting with the tomatoes, throw all ingredients into your blender. If you have a Vitamix or other high powered blender, you can do it all at once, but if not, then blend one thing at a time and then add the next item.
Garnish with slices of tomato.
Serves 1 for a hefty dose of nutrition (as in the bowl above!). Can also be shared for less hungry folks.
