Creamy Coleslaw Recipe

This creamy coleslaw recipe has a delightful sweet and sour tang and a deliciously crisp and crunchy texture that explodes with flavor.
So here is the raw vegan recipe for coleslaw!
Ingredients:
1x baby purple cabbage (shredded)
2x large stalks celery
2x medium carrots (grated)
1x cups cherry tomatoes (halved)
1x cup sundried tomatoes (chopped into small pieces)
1x cup medjool dates (chopped into small pieces)
Coleslaw Dressing Recipe:
2x Red Bell Peppers
2x oz sunflower seeds
4x medjool dates
2x tbsp date mustard or other mustard (optional)
Garnish:
1x cup cherry tomatoes (halved)
Method:
Mix the shredded cabbage, grated carrots and chopped celery, cherry tomatoes, sundried tomatoes and dates together in a large bowl.
Place all the dressing ingredients into a blender and blend on high speed until very smooth and creamy.
Pour over the coleslaw and mix in well.
Add the cherry tomatoes to garnish.
Serves 4-6
This is a wonderfully healthy coleslaw recipe and can be enjoyed on any occasion.
The use of the sunflower seeds in the dressing provides a wonderful creaminess, yet it is only two ounces for the whole dish. Therefore, it remains a very low fat recipe that can be enjoyed even if you're following a low fat diet.
