Easy Casserole - Mushroom Masala Casserole

This easy casserole is the ultimate in healthy casserole recipes. It is super quick to prepare and the taste is magnificent!
You have to try it to believe it, but I felt as if I was eating a cooked casserole when I ate this dish as I couldn't believe that these flavors could be achieved with such a simple and easy to prepare raw vegan dish!
Ingredients:
500g Button Mushrooms
2x Tomatoes
1x Red Bell Pepper
1x Yellow Bell Pepper
3x Stalks Celery
15x Sundried Tomatoes
10x Dates
1x Cup Soaked almonds (soaked at least 1 hour)
1x Tbsp shredded coconut
1x Tbsp Masala curry spice
1x Shallot Onion
Method:
Slice the mushrooms thinly and place into a pie dish.

Add the remaining ingredients to a Vitamix and blend until smooth.
Pour over the mushrooms and mix well.
Decorate with sliced tomatoes, almonds and fresh herbs.
Serves 6
