Fruit Dessert Recipes - Choc Nut Pudding with Strawberry Cashew Custard
Most fruit dessert recipes are wonderfully healthy. However, this decadent treat is very high in fat and should only be considered as a very occasional indulgence!

Choc Nut Pudding Ingredients:400g Dates 2x cups Almond Pulp (Left over from Almond Milk) 2x tablespoons Cacao Powder Almond Pulp - Left Over From Almond Milk To get almond pulp you need to soak almonds for at least 6 hours, but preferably 12. Drain the soak water, and then blend 1 cup of almonds to 3 cups of water. This makes a rich, creamy and delicious almond milk. You then put the almond milk through some cheesecloth or a sieve, or even better: a nut milk bag. This separates the milk from the pulp. You can use the milk for a variety of things, as a base for smoothies, or just to drink as is! Use the leftover pulp for this recipe! Method In a food processor, process dates until they form a thick caramel paste. Add cacao powder and process until a rich chocolate paste is formed. Use a spatula to move contents of food processor into a mixing bowl. Stir the almond pulp into the chocolate paste until a thick chunky chocolate pudding is formed. Strawberry Cashew Custard Ingredients: 1x cup Cashew Nuts 400g Fresh Strawberries Place strawberries in blender and blend, no water needs to be added. Add cashew nuts and blend until thick and creamy. Refrigerate for 1-2 hours and then serve.
