Healthy Meal Recipe - Lettuce Sandwich (No Bread!)

This healthy meal recipe is for those times when you crave something familiar, like a cheese and tomato sandwich, but without the bread or the artery clogging cheese!
It tastes amazing and really does feel like you're eating a cheese and tomato sandwich, except a lot better, this version is fresh and crunchy and doesn't clog your digestive system.
Before you get going with this recipe, you'll need to make up a batch of 'cheez' from pine nuts.
This is REALLY yummy and tastes like a smoky cream cheese.
Ingredients: Pine Nut Cheez
1x cup pine nuts
1/4 cup water
2x stalks celery
1x lemon
10x Sundried Tomato
Method: Pine Nut Cheez
Place all ingredients into a blender and blend into a smooth and creamy pate.
Now you're ready to make your sandwich!
Ingredients: Lettuce Sandwich
Romaine Lettuce Leaves
1x Large Avocado
2x Tomatoes (sliced)
Pine Nut Cheez
Method: Lettuce Sandwich
Mash the avocado in a bowl and add whatever spices you prefer (we added some date mustard - mustard made from a blend of dates and mustard seeds - in this recipe and it was great!)
Take a romaine lettuce leaf and spread on a layer of pine nut cheez.
Next add some sliced tomato.
Then add a layer of avocado.
Close the sandwich with another romaine lettuce leaf.
Makes about 4 big lettuce sandwiches.
You will have some pine nut cheez left over, and this can be used in a multitude of ways, spread on any raw vegetables, or as a salad dressing or a dip. You'll definitely be finishing it soon!
