Healthy Soup Recipes

These healthy soup recipes are for those who are either transitioning to a raw food diet and still like to include some cooked food, OR for those who like to invite friends over for dinner and would like to offer a mix of cooked and raw food.

These healthy soup recipes contain NO salt and very simple ingredients.

I find it quite strange when I read a soup recipe and find that it contains so many unnecessary ingredients, such as various types of stock, salt, oil etc.

These are simple healthy recipes with few ingredients, and, when served with a massive salad make up a pretty awesome healthy and satisfying meal for those who prefer to include some cooked food on the menu.

We prepared these soups for friends while on holiday and served them with other raw dishes, such as this picture below where a butternut soup is served with Nut Cheez and Avo Handrolls, a raw Tomato Soup and romaine lettuce leaves which we dipped in the soup as the 'bread'.

Healthy Soup Recipes - Thai Butternut Squash Soup Recipe

Healthy Soup Recipe

Ingredients:

1x Large Butternut
1x Large Onion
1-2x Cups Coconut Cream
Chilli/Curry Spice
Handful Garlic Chives

Method:

Peel and dice the butternut. Peel and chop the onion. Add the butternut and onion to a steamer and steam until cooked.

Throw into a blender with the coconut cream and some curry or chilli spice and blend. Do it in stages so that you don't overload your blender. Taste test as you go to make sure you have enough spices for your liking.

Once all the butternut and onion is blended with some spice and coconut cream, put it into a serving bowl.

Chop some garlic chives or other fresh herbs of your choice and throw over the top.

Serve with big romaine lettuce leaves for dipping into the soup.

Serves 6

No one has ever asked us for some salt when we have served this recipe! So it is a winner in terms of healthy soup recipes for all cooked food eaters.

Note: For the coconut cream in these recipes, you can buy this from any supermarket. Read the label and make sure that the only ingredients are coconut and water. Do not buy coconut creams that are filled with unnecessary (and harmful) additives. You can also simply use coconut meat from fresh coconuts and blend up with a little water until it forms a cream!


Healthy Soup Recipe - Thai Cream of Broccoli Soup Recipe

Ingredients:

8x Small-Medium Potatoes
2x Heads of Broccoli
1x Large Onion
2x Cups of Coconut Cream
Curry/Chilli Spice
Garlic Chives

Method:

Peel and dice your potatoes, chop the broccoli into pieces and peel and chop the onion. Add all three to a steamer and steam until cooked.

Blend slowly with some coconut cream and curry or chilli spice.

Add to a serving bowl once blended. Chop the garlic chives and stir into the soup.

Garnish with some cherry tomatoes.

This healthy soup recipe is deliciously filling and satisfying.

Serve with a big salad!

Healthy Vegetable Soup Recipe - Thai Cream of Mushroom Soup Recipe

Ingredients:

1x Punnet (250g) Portabello Mushrooms
1x Punnet Button Mushrooms
1x Punnet Large Black Mushrooms
1x Onion
2x Cups Coconut Cream
Chilli/Curry Spice

Method:

Chop the mushrooms into big chunky pieces. Peel and finely chop the onion. Add all ingredients (including the coconut cream) to a pot and cook slowly, while stirring occasionally.

When it begins to boil, take it off the heat, allow it to cool and serve with fresh basil leaves on top.

Serves 4


Simple Healthy Recipes - Chunky Butternut Curry

And the final recipe is a bonus! Just to show an additional angle to the simple healthy recipes featured above. This is a chunky butternut curry that uses a mix of all the ingredients that were used for the healthy soup recipes above.

Ingredients:

1x Large Butternut
1x Head Broccoli
2x Onions
500g Mushrooms
200g Baby Corn
4x cups Coconut Milk
2x Heaped Tsp Curry Powder (or more if desired)

Method:

Chop the butternut into pieces (you can leave the skin on this time!).

Chop the onions and add the butternut and onions to a pot with some curry spice and the coconut milk.

Cook the butternut and onion in the coconut milk. When the butternut is soft, add the broccoli and then, five minutes before you're ready to serve, add the mushrooms and corn so that these cook very lightly.

Serve this over Cauliflower rice!
