Raw Food Recipes - Raw Vegan Lasagna

Raw food recipes like this one are perfect for when you're entertaining, as it looks really impressive, but as with most of the recipes up on this site, it is simple to prepare.
Ingredients:
- Sheets of Untoasted Nori
- Cucumbers, either diced by hand or sliced up in the food processor.
- Tomatoes, sliced
- Carrots, grated
- Peppers, diced
Sauce:
- Sundried Tomatoes
- 1x Red Bell Pepper
- 1x large mango
Blend sauce ingredients in blender until smooth and thick. Do not add any water to the blender. Begin with the mango and then add the red pepper and sundried tomatoes until the desired tang is achieved. This also makes a divine sauce to dip sushi rolls. Place a sheet of nori into a square dish. Layer the sliced tomatoes and cucumbers on top. Add a layer of sauce.
Add another sheet of nori and a layer of tomatoes and cucumbers and another layer of sauce.
Then add a layer of grated carrots and top off with diced peppers. Add some parsley for decoration.
