Raw Food Recipes - Spinach Salad

Salads are the simplest, healthiest raw food recipes available. What could be better than fresh, crisp spinach?
The more green leafy vegetables you can eat the better your health will be, so this delicious salad will definitely give you a boost.
Ingredients:
- 4 cups of spinach chopped
- 1x avocado diced
- 2x cucumbers diced
Method:
Toss the spinach, cucumber and half the diced avocado in a salad bowl.
Dressing:
- 10x Sundried Tomatoes
- 2x Fresh Tomato
- 1x Red Bell Pepper
Method:
Place dressing ingredients in blender (do not add water) and blend until smooth.
Pour tomato dressing onto the bed of chopped spinach and cucumber and garnish with the remaining half of the avocado and some cucumber shavings.
Serves 2
