Raw Food Vegan Recipes - Melissa's Lasagna

Raw Food Vegan Recipes were well represented at a raw food dinner I attended at my sister Melissa's place.
The lasagna that Melissa made was SO good that we dreamed about it for days afterward, and I had to get the recipe from her to post here.
Ingredients: Sauce
Black Olives (half a large jar)
15x Sundried Tomatoes
4x Beef Tomatoes
6x Oranges (Juiced)
4x Cloves Garlic
3x Red Bell Peppers
1x Stalk Celery
Method:
Blend together to form a thick, chunky sauce. The olives should nearly fill your blender jug, so if they don't, then you don't have enough olives. Be sure to add the orange juice in small increments, as too much will make the sauce too sweet. So do the taste test as you go.

Ingredients: Layers
Sheets of Untoasted Nori
4x Carrots (Grated)
2x Red Bell Peppers (diced thinly)
2x Stalks Celery (diced)
2x Medium Avocadoes
1x Bunch Asparagus
2x Cups Button Mushrooms (thinly diced)
2x Large Zucchini (thinly diced)
2x Cups Beansprouts
1x Cup Fresh Rocket
Method:
- In a large pie dish layer two sheets of Nori and then add grated carrot for the first layer.
- Add the diced red bell pepper on top of the carrot. Add a layer of sauce.
- Layer of Nori.
- Add the celery followed by a layer of the diced avocado. Add a layer of asparagus.
- Layer of sauce.
- Layer of mushrooms followed by a layer of zucchini.
- Layer of sauce
- Layer of Nori
- Layer of beansprouts
- Layer of sauce
- Garnished with fresh rocket.
Serves 6
