Method Blend the red bell pepper and the sundried tomatoes in the vitamix. Dice the tomatoes and mix in a mixing bowl with the alfalfa sprouts and the pine nuts. Pour the red pepper and sundried tomato sauce over this and mix together. Using a scissors, cut the sheets of nori into eight squares. Take two plates and put two squares of nori onto each plate. Slice the avocado and place the slices onto the nori squares to form the base. Next, add the tomatoes, sprouts and sauce on top of the avocado. Place the remaining nori squares on top and serve. Serves 2
