Seaweed Salad Recipe

This seaweed salad recipe is raw, vegan and amazing! I'm not going to go on about seaweed nutrition because I don't eat this for any purported benefits of seaweed, I eat it because it is fabulous!
In fact, I don't believe we need to eat things from the bottom of the sea in order to be healthy, and though there are supposedly all these seaweed nutrients, there are downsides to seaweed too which is a topic for another day.
However, I eat seaweed from time to time because it can jazz up a salad like nothing else!
Ingredients:
4x Large Cucumbers - spiralized into noodles
Pine Nut Cheez
1x Cup Pine Nuts
2x Stalks Celery
1x Lemon
12x Sundried Tomatoes
Mixed dried seaweed (soak for 10 minutes) then drain
2x Tomatoes Sliced
Method:
After spiralizing the noodles place into bowls.
Add the pine nut cheez ingredients to a blender and blend with a dash of water to achieve desired consistency.
Add a few tablespoons of nut cheez on top of the noodles.
Then add slices of tomato and then top off with mixed seaweed.
Serves 2 for a large portion (as in the picture) or 4 for a reasonable portion.
