Stuffed Peppers Recipes - Learn how to make stuffed peppers with this easy healthy recipe!
Ingredients:
4x Orange Bell Peppers (or red or yellow)
Method:
Cut off the top of the peppers and then scrape out the seeds, being careful to maintain the shape of the peppers and not cut any holes into the bottom!
Ingredients: Stuffing
2x Corn on the cob
3x Stalks Celery
1x Avocado
1x cup fresh coriander
Squeeze of fresh lime juice
Method:
Using a knife slice the corn off the cob and place into a mixing bowl. Slice the celery thinly, finely chop the coriander. Mash the avocado and add to the bowl with a squeeze of lime juice.
Scoop the stuffing into the peppers and serve!
