Sweet Potato Soup Recipe

This sweet potato soup recipe has only 4 ingredients, making it the most simple recipe I have ever encountered, and the simplicity only adds to its deliciousness.
Oil-free, salt-free and so much tastier because of it, this wonderful recipe is perfect for people who are wanting to transition to an optimal raw food diet, but would like to have some healthy transitional cooked food meals to ease the way.
This soup definitely counts as a healthy transitional meal.
Ingredients:
- 2 Sweet Potatoes (peeled)
- 2 Small Onions (peeled and sliced)
- 150ml Coconut Cream
- Dash of cinnamon
Method:
Steam the sweet potatoes and onions until soft and cooked.
Either buy coconut cream ready made from a supermarket (make sure the ingredients list contains only coconuts and water, no other additives) OR make it yourself by blending fresh coconut meat with a dash of water.
Throw the steamed sweet potato, onion and coconut cream into the blender with a sprinkle of cinnamon and blend into a thick soup.

Garnish with some parsley.
Serves 2
